Hello, Challenge-mates!
I drove to Omaha, NE to visit a dear friend and we ventured into an fire-baked pizza restaurant. The combination of conversation with a sweet soul, just enough pieces of mushroom pizza, and this salad made it my favorite meal of the week! I drove home with the ingredients for the salad and re-created it for my parents. :) Bon appetit!

P.S. I used goat cheese instead of blue, left out the salt and pepper, and tried my first basalmic reduction to glaze the salad. The chef at "Pitch" in Omaha made it look like a fancy, prosciutto-wrapped volcano, but I just shredded the meat and tossed it all together.:) It was fun!
